Today I am going to share with you our family meal plan for the last 2 weeks. 

These weekly meal ideas are insanely affordable, QUICK & easy. Honestly, many of these meals can be made in well under 30 minutes. So, if you are a busy mama like myself you will find many of these dinner ideas useful for your own meal plan.

AND…if you really want to make your week a whole lot easier you can freeze your leftovers for future dinners or use them for lunches the following day.

I thought it would be helpful in addition to that if I shared a few of the standout meals that our family really enjoyed. I will be sharing my thoughts along with real-life photos so that you can see what it looks like as a regular mama making these meals for her family.

 

1. Chicken Fajita Salad

This chicken fajita salad was a new take on fajitas that I have never even thought about before and let me tell you IT WAS AMAZING! 

If you have been following my previous meal plans then you will know that I am a huge fan of dinners that can be customizable without really doing anything extra. It is a great way to feed picky eaters adults and kids alike.

I will say that I did do a few things differently than the original recipe that helped save on time. 

  1. Instead of cooking the fajita portion on the stove, I opted to throw it all together (chicken, onion, peppers, and seasonings) in a casserole dish and bake it in the oven. This took about 20 minutes total.
  2. I opted out of adding tomatoes to the original fajita mixture and prepared them separately for the salad mixture. I figured this would be the best way to keep the tomatoes from being soggy the next day for lunch leftovers.

 

 

2. 10 Minute Tostadas 

If you are looking for an incredibly quick meal in under 15 minutes then these 10-minute tostadas NEED to make it to your meal plan this week.

Again, this meal is extremely customizable so everyone in the family can make it to their own liking. I like to set this up bar style so that everyone can make their own themselves. 

My corn tortillas had been in the freezer and were a little rough so instead of baking mine in the oven, I decided to fry them in a little oil on the stove. Even with that extra step, they were incredibly easy and quick to make. 

I even had a few extra corn tortillas left at the end and was able to make the kids some homemade tortilla chips which they always enjoy.

 

 

3. Beef & Pepper Rice Bowls 

 

This beef and pepper rice bowl was another delicious quick meal under 30 minutes. This dinner takes literally no time at all and is perfect for those busy weeknights when you have no energy to cook.

To make this go even quicker you could use leftover rice from a previous dinner or those ready to serve rice bowls like this.
